| What surprises folks most is that Im a guy and that
I starting cooking at age seven. One day I asked my mom if I could have a lemon meringue
pie. She said "certainly". I said "when will it be done?" She said
"as soon as you finish baking it." oh oh. "But I dont know how,"
I lamented. She said "just read the cookbook". "But I dont know how
to read." "Heres the cookbook, learn how." It took awhile and a whole bunch of effort, but I learned how to read the recipe. I had to ask and find where all the ingredients were. I had to ask how to do things. I was so small I could walk on the counters to get supplies. Somehow I was going to make me a pie! It was finally done and put in the oven. I knew the pie would be hot when done so being smart I left the potholders under the pie. It didnt say not to anywhere. Big mistake. Smoke was pouring out the oven door. My know-it-all big brother was chorkling with glee "Is anybody trying to burn down the house? It sure smells like it." I put out the fire and got the pie out. It was still ok. I wish I could have eaten it all so my ornery brother wouldnt have been able to sneak a piece. As you can see you can do anything as long as you have a recipe. I have been experimenting for the last 40 years. What would make this not just good, but totally excellent? I would come across some really good tasting food and found out how they did it. In Japan I had to find a translator to find out how to make one unique recipe. I collected many award winning recipes. I kept fine tuning them and making them better. I used unusual and healthier ingredients. I also got the recipes for some full- of-naughty-things-decadent-from-scratch recipes too. Need caramel sauce - just make some!
